Good Eats

We decided to have our Cinco de Mayo feast a couple of days early -- plus my cilantro was really growing and it need to be trimmed so I thought I would make some home made salsa. It was delicious!
All the ingredients:
Whole tomato's {I used 2 jars of the whole tomato's}
1 large onion - you can use half or whole -- we really like onions so I used the whole thing and I just rough chopped it
2 teaspoons salt
2 teaspoons garlic powder
2 teaspoons cumin
jalapenos to taste - I just dumped in a couple of spoon fulls - depends on how spicy you like it
1/4 bunch cilantro - since mine is homegrown again I just kinda eye balled it and chopped it up
Put the tomato's in a blender and puree. Then I dumped them in a large bowl and added everything else and stirred it really well. Then I just poured it into a pitcher and refrigerated.
Easy Peasy!
It made a whole pitcher full - we've almost eaten all of it!
I also thought I would make some home made chips.
This was super easy too- just be sure you get CORN tortillas -- I had a little trouble finding them.
Cut them into triangles.
Put some oil {all I had was vegetable but I would recommend peanut} in a skillet and fry them up. Salt them up when you take them out of the oil.
Made a whole basket full - we also ate on these all weekend.
