I wanted to share a quick breakfast casserole recipe with you guys. I can't take credit for it -- the recipe came from my sister in law, Candy.
I got busy making it and didn't take any pictures. This is the only picture I got because we were too busy stuffing after faces after it came out of the oven!

You need:
6 slices of bread, buttered with the crust cut off
6 eggs, beaten
2 cups shredded cheddar cheese
1 lb. sausage*, browned and drained
1 can of evaporated milk
splash of regular milk
salt & pepper
*You could really use any kind of meat/veggie you wanted - I went with sausage this time but I might try ham or bacon next time.
In a casserole dish, lay your pieces of bread buttered side down. Next pour on the cooked sausage and spread it around. Beat the eggs in a separate bowl and pour in the can of evaporated milk and a splash of regular milk. Salt and pepper them. Pour the egg mixture on top of the sausage and bread. Top with the 2 cups of cheese. Take a spatula and lightly press everything down.
Bake at 350 for about 40-50 minutes {just take it back before it gets too brown}. It will puff up some in the oven but don't worry it'll come back down once you take it out.
